At Chimera, we specialize in authentic Dutch-style fries made with PNW potatoes and scratch-made sauces. Inspired by the street-side fry shops of Amsterdam, we bring twice-fried perfection and hand-cut quality to the vibrant food scene of PDX. Served with handmade garlic and herb aioli, Portland Ketchup, diced onions, and snowy parmesan cheese! :)

Our signature craft cola recipe is cool and refreshing, citrusy, spiced and sweet (but not too sweet) all at the same time. Using cane sugar, local bitters and other botanicals, and just the right amount of fizz, we finally found the perfect accompaniment to our hot, crisp, and salty fries.
